Black Bean Soup

Soup is definitely one of my favorite foods. This soup recipe is so quick and easy, and also fairly healthy. With fall around the corner it is the perfect time to make it. I have made it at least twice a month for the past year or so and even Leland who typically hates beans loves it. Also it tastes much better than it looks.

Black Bean Soup
 -serves: 6
-prep time: 5 minutes
-cook time:10 minutes
-total time:15 minutes

Ingredients:

  • 3 cans black beans (do not drain)
  • 1-2 cups chicken broth**
  • 1 cup salsa
  • 1 tablespoon chili powder
  • 1 teaspoon dried minced onions
Step 1: Blend 2 of the 3 cans of black beans in a food processor or blender, do not drain before hand. 

Step 2: In a large pot bring the chicken broth to a boil. (We use chicken bouillon cubes, if using canned broth, you can just add all the ingredients at the same time.)

Step 3: Add the blended beans and all the other ingredients to the pot and return to a boil. 

Top with sour cream, cheese and whatever else you want, and enjoy!

**Some brands of canned black beans have more liquid in them than others, adjust the amount of broth you use according to how thick you like your soup.
